Dad Timmons says he has picky eaters among his 5 children.  Here are his 3 tips to dealing with them. 1. Serve smaller portions on smaller plates. Prevents sense of overwhelm. 2. Feed them with a “healthy conscious”, meaning, feed them fresh food.  It tastes better. Stay away from processed, especially canned foods. 3. Say, “that’s it.!”  He used to take orders as if he was a restaurant and then the light bulb went on – no more.  What I serve is what you get or just drink water.  No, he is not worrying about his kids going hungry. When listening to Joseph talk about his picky eaters, it is clear he knows their issues.  One was, “My son will eat bright green cooked broccoli but not muddy green.”  I say he’s a smart boy – who want mushy broccoli?  Another was because one does not like eating the white of an egg, he scrambles it instead.  I loved the fact that this dad does not cook with salt. Broccoli_Ham_Cheese_Quiche2

Quiche, a fancy French word for an open egg-based pie, is so easy to make! Many run from it because it sounds so gourmet.  All you do is get a pie crust and lightly bake it.  Then add beaten eggs and any combination of fillers.  Many use cheese, spinach and bacon (turkey please) or a good sausage mixed with a little cream or milk.  Sauted broccoli, carrots, onions, garlic, herbs, tomatoes, shredded sweet potatoes, beans,  chicken… the list of possibilities is a long as your imagination and your food inventory.   Once you pour the egg filler into the crust, bake it until the eggs are firm. Any combination is filled with high performance nutrients! When we served a Spinach Bacon Quiche to the Kid Kritics, they all began chanting, “Quiche, Quiche, Quiche…” They became instant fans.  There are lots of recipes!  One is featured on www.KidKritics.com.  Go for it and customize one to suit your family’s palate!

Walnuts fuel your Brain, Blood, Bones, Hair, Heart, Muscles, Nails, Nerves and Skin! That’s a lot of nutrient power from one or more bites. Your money is well spent when you buy some for your family.  Buy broken pieces to save some money.  Put them in cereals, salads, and trail mixes.  Use them as coatings on meat and fish and as fresh toppings on casseroles, bean dishes and desserts.  Store them in the refrigerator  as their oils may go rancid at room temperature.  I like to pop some in my mouth straight from the freezer – nice and crunchy!  Make walnuts a staple in your kitchen!

One free-range egg scrambled with Parmesan cheese and a smoothie made with water (your own filtered), ice, half a banana and peanut butter – about $1.00! For some green power, sprinkle in a few parsley flakes. You can replace PB with another nut of seed butter -use just a spoonful or two.  (Please avoid sugar added brands).  Your kids will stay healthy full for hours and hopefully be totally focused and behave as well!
