Go find yourself a pineapple wedger.  It takes the struggle out of serving your family fresh mouth-watering pineapple chunPineapple wedgerks.  I have always used a big knife and consequently have lost a lot of juice in the process.  Plus everything around me got sticky and had to be cleaned. No more.  Just put this baby on top of your fresh pineapple and with a good push, you are all set!  Fresh pineapple costs less because you don’t pay for labor and packaging.  And, it is better for your family. Because you will be more likely to buy and serve your family nutrient-packed delicious pineapple, investing in this gadget is an investment in your family’s health.  Angela Russ, thank you for this tip.

cooking with loveRuth Milstein took 6-7 years to write this award winning cookbook so you can have everything you need to know in one binder. From Utensils, Useful Substitutes, and Healthy Handling of Food to simple sumptuous recipes for fresh salads, soups, veggies, entrees, pasta, rice, bread, tofu, sauces, dips, desserts and more… it is all there for you. AND, most are family recipes!

What jumped out of our conversation today is that she prepares and freezes a lot of her food in advance – even brown rice. During your busy days, all you have to do is move your food of choice into the refrigerator in the morning and it is ready to be heated and for last minutes touches when its time for dinner! She explaines this as your listen.

Ruth’s book is filled with answers and tips you have been looking for. We love it!

EASY – SUPER EASY – TOMATO SOUPThank you Tree of Life

PREHEAT: Burner, medium

PAN: Medium to large sauce pan
TOOL: Immersion Blender, a soup maker’s best friend!

1 28 ounce can of Crushed Organic Tomatoes with Basil or Herbs

1 32 ounce carton of Organic Vegetable Broth, low-sodium

2 cups organic rice milk or organic heavy cream

Combine tomatoes and broth in sauce pan over moderate heat. When it begins to bubble, stir and add rice milk or cream. Reduce heat to low and let it continue to simmer gently for 15 minutes. Stir occasionally. Then take your immersion blender, place it in the middle of the pan, turn it on and blend until all the tomato bits are gone. Season as desired with sea salt. Sprinkle parsley flakes on top. Serve!

4 God-Made Colors: red, tan, white, green
4 Food Groups: fruit (tomatoes), vegetables (broth), grains or dairy, herbs

NOTES
We prefer the use of rice milk for a light and delicious soup. Heavy creamy is very rich and should be reserved for special dinners on occasion.

This soup is SO easy to make. The company making the organic crushed tomatoes with herbs has done the seasoning work for you. Enjoy it!

Tree of Life created this recipe and suggest you choose their brand of crushed tomatoes and vegetable broth. Go to www.treeoflife.com to find them in a store near you.
