Peas are filled with nutrients that feed your brain, bones, ears, hair and heart!  They are seeds grown in a pod and technically are fruit.  However, they are commonly labeled as vegetables.  Sun ripened ones are tender and sweet.  Whether fresh or frozen, the best way to cook them is to bring water to a boil, put your peas in the water, turn off the burner and let the peas sit for about three minutes. Gently strain and put them in a bowl with a little butter and sea salt.  Serve.  To make them even better, stir in some freshly chopped mint leaves.  Hmmm good.  Ellen's kids learned to love peas when they picked some fresh from a garden. They became life-long fans.  Look for some fresh peas in a farmer's market.
