<p>The answer for safe eggs is to choose those laid by chickens that are well care for, not piled up in cages in a building.  Cage-free helps.  Organic is well regulated so its your best bet.  When it comes to cost, the <strong>nutrient value of one egg is so high</strong> that it is worth it. When you compare the price of a box of  sugar-filled, artificially colored and flavored, nutrient-empty cereal to a dozen of good eggs, it is easy to see where you should spend your money.  Buy the better eggs, make some French toast, and enjoy them.</p>

Here is the second entry to our new series on Performance Foods.  Every food created for us to eat contains specific phyto (plant) nutrients that are advantageous for different parts of our body.  Each week you will learn about one.  This week is one most of you have in your kitchen year round. <strong>LETTUCE fuels muscles, nerves, bones, heart, joints, lungs, eyes, mouth/teeth, nose (olfactory), heart, brain, blood, and nails.</strong>  We are talking about dark green lettuce such as Romaine, not pale Iceberg lettuce. Though the later is filled with water and has some fiber, the white and weak green colors tells you It contains few life-giving phytonutrients.  To receive all the benefits of lettuce, serve true green versions, the darker the better!</span></span></div>
