Traveling to celebrate our 25th anniversary! Yes, I have been traveling a lot mostly for pleasure though when I am around food, I am always working… and I was around lots of great food. While touring Israel, I was surrounded by fields and valleys filled with banana, date, olive, pomegranate, peach, nectarine, plum, nut, and citrus trees. Rows of lettuces, herbs, corn, beets, beans, garlic… you name it, were abundant. Grain fields had just been harvested. This country knows how to make every inch of the earth and every drop or water count to produce food!
Consequently we ate fruit and vegetables for breakfast, lunch, snacks and dinner! Tons of mouth-watering alkaline food. Hummus was a daily side at dinner. Cheese and meat were also fresh and delicious but less was served so less we ate. Fresh fish was more often offered as a main entree so we enjoyed some. As a result, we never felt or slept better! In Spain, we continued to enjoy fresh produce with each meal. The portions were small and yet we felt full thanks to their fiber based delicious dishes, especially tapas!
By the time we arrived back in the states, we were hooked on the benefits of eating more alkaline and less acid-based foods. We no longer have meat everyday. More beans please! We crave lots of fresh fruit and vegetables. Now we go to the market more frequently to buy what we don’t have growing in our little garden and pots. Our food bill is lower and as is our weight. We actually lost pounds on our trips and are determined to keep them off. We invite you to do the same. We invite you to fill you meals with colorful fruits and vegetables. Kids living around the Mediterranean eat these foods; serve them to yours!

P.S. I asked if children in Israel are overweight or obese. The answer was, “No.” What I witnessed confirms this.
This delicate nutty flavored herb is chock-a-block full of nutrients. Sesame seeds feed your brain, bones, ears, hair, heart, lungs, mouth/teeth, muscles, nails, nerves, and nose. Their good brain supporting fats help to lower LDL and increase HDL levels. Along with their quality amino acid proteins, they also supply you with B complex vitamins (niacin, folic acid, thaimin, pyridoxine and riboflavin). They contain a very rich source of minerals: calcium, iron, manganese, zinc, magnesium, selenium and copper.
And, boy are they good to eat! Hummus is made with Tahini, a sesame seed paste. They often are sprinkled on baked goods such as bagels. We love to add them to salads, including egg and tuna. Certainly they enhance all salads, egg dishes and many fruit desserts. Adding them to entrees before serving is a great way to add nutritional power to every meal. Sesame seeds are a brilliant way to stoke your kids with so many of the nutrients they need while growing. We buy them in bulk and keep them in jars for handy use. Try this, too!

Pure Coconut Water is "nature's great re-hydrater" – its full of sodium, potassium, phosphorous and magnesium making it an excellent placement for energy and sports drinks. Plus it has just enough sugar to make it taste yummy and as well as refreshing. Tropical countries have been serving it to their very young, growing children, and adults for years. It even has been used for electrolytes (minerals) and hydration replacement for the sick, especially those with stomach bugs.
Coconut Oil is also a winner. It's medium chain fats are smaller and thus more easily digested, immediately used by the liver to produce energy avoiding spikes and fat storage. And, it contains important anti-viral, anti-bacterial and anti-fungal properties. Thus, not all saturated fats are the same. This is one you want to include in your food mix. The other good news is that is has a high heat tolerance making it the preferred oil for cooking.
As with any produce, organic is better. We are currently researching the brands we would recommend. Be sure to avoid coconut waters that are "sweetened" and have added flavors. Buy it straight and serve on ice. Delish!

Coconut Oil is a naturally occurring saturated fat that is full of benefits. Surprised? Not all saturated fats are bad – this one is super good for you. It is made up of medium -chain fatty acids that are easily digested and converted by the liver into energy. Fifty percent of the fat in coconut oil is lauric acid which the body converts to anti-viral and anti-bacterial properties. Bottom line benefits:" improves heart health, boosts thyroid, increased metabolism, promotes lean body weight and weight loss, supports your immune system." It should be your first and only pick for cooking oil as it is the "only oil stable enough to withstand heat." If you have any more questions, go to Dr. Mercola's sight for more details – he points out coconut oil's tropical wonders that have been used for thousands of years. It is the only oil he uses when cooking. Now it is the only one I use, too! Add it to your food staple list.

Here's what food oils to buy and how to use them to get the most for your money. Buy Extra Virgin Olive Oil and non GMO Canola Oils in dark green or brown glass jars. The rest , including "Pure Olive Oil" have been processed enough to remove their health benefits and add unwanted ingredients – chemicals. Store in a cool dark place, away from your stove and burners. These oils should be good for 18 months to 2 years. Hopefully you use them up before then – your brain needs it! The best have a bite in the back of your throat. The bigger the bite, the better it is. If you open a jar and it smells like Play-Doh, it 's bad – take it back or throw it away. Please, stay away from those sold in plastic containers or cans that are now being lined with BPA.
Use your non-GMO, organic Canola Oil for everyday cooking. Save your EVOO for drizzles over vegetables and salad dressings, though it is also good for sauteing as well.
One more thing: Those bright store lights degrade oils. Pull out a bottle/jar from the back of the shelf where it has not been exposed to the light. (I do this when buying produce as well.)
