SPELT
Protein Power Grain
1. Ancient Grain – 9000 years ago was first harvested: Staff of life for many centuries in the Asian, Middle Eastern and European cultures. (Germans: dinkel. Italians: farro. French: epeautre) During Industrial Revolution, wheat took over as a grain staple.
2. Superior Nutritional Profiles: protein, essential amino acids (protein not made by our bodies), complex carbohydrates, iron, potassium, fiber.
3. Easy to Digest: very delicate kernel and fragile gluten content makes it easy to digest, even for some with allergies. Well absorbed by the body so nutrients are put to good use.
4. Higher Alkaline, Low Acidic Values: Important for maintaining proper pH balance, critical for good health.
5. Three Hulls and Husk Protect Kernel: No need for underground and above ground pesticides, herbicides – grain naturally protected so no need for chemicals.
6. Eat Less – Feel Full: High fiber and nutrient content naturally satiates one’s appetite.
7. Not Tired but Energized: This is the opposite of how most feel after eating wheat which has more gluten.
8. Tastes Delicious! Everyone, including the Kid Kritics, talk about spelt’s nutty sweet flavor. Many say it has more flavor than wheat.

Purity Foods

Six reasons this brand is our top pick
1. Purity Foods brought Spelt to the United States: They were asked by an European to bring spelt to this country. And, they received letters form chronically ill people requesting spelt products. Off they went to Europe to investigate this grain. Result, they brought back seed stock and began planting it in Michigan (now number one spelt producing state). First harvest was in 1991.
2. Very supportive of spelt farmers. Purity Foods goes the extra mile to assist farmers in producing and harvesting spelt. Healthy farming makes healthy food.
3. Invested in equipment to break down hulls and husk: Wheat is easier to prepare for food use because it does not have extra natural protective husks. Purity Foods’ commitment to spelt required them to create efficient production processes to prevent damaging the organic kernel’s food value. .
4. Leading manufacturer of organically grown spelt products: again, this is about commitment to quality.
5. Believe food should be in harmony with health: This reveals the essence of this company’s philosophy. They care about you.
6. Kid Kritics LOVED spelt pasta! When they first looked at it, they weren’t so sure. After they tasted it they raved about this pasta. It was simply served with Earth Balance (butter), a little sea salt and Parmesan cheese. “More, more, please MORE!”
