A Well Kept Secret
1. Authentic Middle Eastern Staple: For centuries falafel has been served as a mezza or main meal in the form of a pita sandwich, a patty, croquette or ball which has been deep fried. It is served with tomatoes, lettuce, tahini and hummus and mint!
2. Great Nutritionals: High protein, healthy fat source when cooked carefully in olive oil. Good fiber content. Beans are primary source of carbohydrates – no cholesterol.
3. Traditional Ingredients: ground chickpeas and/ or fava beans, wheat flour, onions, garlic, parsley, coriander, cumin, tumeric, salt.

Falafel Taco Salad

Prep Time: 10 minutes
Cook Time: 20 minutes (if using mix)
# Serves: 6 or more, depends on age
PREHEAT: 1 burner, medium heat (if using mix)
PANS/EQUIPMENT: Lg.frying pan (if using mix)
DO THIS 12 HOURS BEFORE SERVING
2 cups Falafel – use mix or buy precooked
patties and break them into little pieces
1 cup salsa, mild
1/2 cup mozzarella cheese, shredded
4 tsp cilantro flakes or 8 leaves finely chopped
Let sit for 12 hours in refrigerator overnight.
Several lettuce leaves, romaine
Taco chips
Arrange on plate or in bowl. Scoop falafel mix on top.
1 dollop salsa, mild per serving
1 Tbsp mozzarella cheese, shredded per serving
Drop dollop of salsa on top and cover all with
shredded cheese. Serve.

TIPS: Kids often think falafel is ground beef. I admit I had to see this to believe this – believe it. What helps are the beautiful balance of herbs and spices found in falafel.
