Lettuce-romaine
Here is the second entry to our new series on Performance Foods.  Every food created for us to eat contains specific phyto (plant) nutrients that are advantageous for different parts of our body.  Each week you will learn about one.  This week is one most of you have in your kitchen year round. LETTUCE fuels muscles, nerves, bones, heart, joints, lungs, eyes, mouth/teeth, nose (olfactory), heart, brain, blood, and nails.  We are talking about dark green lettuce such as Romaine, not pale Iceberg lettuce. Though the later is filled with water and has some fiber, the white and weak green colors tells you It contains few life-giving phytonutrients.  To receive all the benefits of lettuce, serve true green versions, the darker the better!
