Barbara’s Puffins Muffins

PREHEAT: oven to 400 degrees F
PANS/EQUIPMENT: 12-cup muffin tin, paper muffin cups, 2 mixing bowls
PREP TIME:10 minutes
COOK TIME: 18-20 minutes
NUMBER OF SERVINGS: 12 muffins
1¼ cups unbleached or whole wheat pastry flour
1½ teaspoon baking powder (unsulphured)
½ teaspoon baking soda
½ teaspoon sea salt
Line a 12-cup muffin tin with paper muffin cups. Mix together flour, baking powder, baking soda, salt.
½ cup granulated sugar
2 ¾ cups Cinnamon Puffins Cereal, Barbara’s Bakery
Finely crush the cereal (will be about 1 cup, crushed). Add sugar and crushed Puffins to bowl with the flour mixture.
¼ cup canola oil
¼ cup honey
1 cup milk or milk substitute
2 large eggs at room temperature
In separate bowl, mix until well blended. Add to dry ingredients, blending with wooden spoon until combined. Do not over mix. Fill muffin cups to ¾ full and bake for 18 to 20 minutes.
OPTIONS: If desired, add ¾ cup nuts, raisins, cranberries, or blueberries to the batter. Top each with extra cinnamon for a garnish!
