Curry Chicken Salad – Featured Healthy Recipe for Kids

PANS/EQUIPMENT: Bowl, cutting board & knife
PREP TIME: 15 minutes
COOK TIME: None
NUMBER OF SERVINGS: 8 or more depending on ages
4 cans Shelton’s Premium Breast of Chicken
Open. Drain out water. Place in bowl. Shred apart.
1/2 cup organic mayonnaise or Vegenaise spread
1 Tablespoon lemon juice
1/4 teaspoon curry powder (your choice)
1/4 teaspoon sea salt
Add to chicken in bowl. Stir thoroughly, breaking up chicken in mix.
1/4 cup celery, finely chopped
1/4 cup slivered almonds
1 Tbsp fresh parsley, finely chopped, or, 1/2 Tbsp dried parsley flakes
Dash paprika
Add to chicken, mix throughout so evenly distributed. Sprinkle a paprika on top. Serve.
OPTIONS: Add lettuce. Serve on whole grain or rice crackers

The kids couldn’t eat this fast enough. We served it on whole grain and rice based crackers. They were surprised to learn about the curry ingredient and realized how tasty this spice is when added to chicken. FYI: curry is a good source of Vitamin B6, Folate, Calcium, Magnesium, Phosphorus, Potassium and Copper, and a very good source of Dietary Fiber, Vitamin E (Alpha Tocopherol), Vitamin K, Iron and Manganese.* Start adding it to your recipes!
