Chicken Peanut Butter Pinwheel
Peanut Butter Dip/Spread
2Tbsp creamy peanut butter
2 Tbsp coconut milk, unsweetened
2 tsp. olive oil, extra virgin
¼ tsp. Bragg or low-sodium tamari sauce
2 tsp lemon juice
1/8 tsp crushed garlic, or less if desired
Place in food processor. Blend until creamy.
1 Tortilla, whole wheat or spelt
2 Tbsp. peanut butter spread
Coat tortilla with PB spread.
2 Slices chicken breast, plain roasted
Place on top of spread.
1 Leaf romaine lettuce
Place on top and in middle of chicken breast. Roll up tightly and slice into ¾ inch
pinwheels. Serve.
