No Fry Chicken Nuggets

Preheat: 375 degrees Fahrenheit
Equipment: 2 small bowls or pie plates, large baking sheet,
resealable plastic bag, rolling pin, cutting board, knife, whisk,
parchment paper
Prep Time: 10-15 minutes
Cook Time: 20 minutes
Number of Servings: 3-6, depending on ages
– 2 large boneless, skinless chicken breast halves
RInse, pat dry and cut chicken into nugget sizes.
– 1 teaspoon paprika
Sprinkle both sides of chicken
– 2 cups Bunny Classics Buttery Rich Crackers (Annie’s
Homegrown)
Place crackers in small sealed plastic bag. Crush with rolling pin. This is a fun step to include your kids! Make sure you end up with at least one cup cracker crumbs.
– 1 Tablespoon coconut, olive or canola oil (non GMO)
Place in bag with crumbs. Mix well. Pour into bowl.
- 2 large eggs (cage free)
In second bowl, beat 2 eggs. Take each piece of chicken and dip first into egg, then coat it with cracker crumbs. Place on parchment paper lined baking sheet. Place in oven. bake for 8-10 minutes, then turn pieces over and bake for another 8-10 minutes, or, until chicken is cooked through. Serve!
Options: Add dried parsley to cracker crumb mixture.
