White Bean Dip

“My son really liked the dip when it was nice and cold from the fridge. The mild taste of the bean dip went nicely with the cheese curls.”(Healthy Recipe Mom, Melody)

Number of Servings: 10-12, depending on ages

– 1 can cannellini beans, rinsed and drained
- 1 clove garlic
- 3 Tablespoons lime juice
- 2 Tablespoons extra virgin olive oil
- 1/4 cup loosely packed fresh parsley
- 1/2 teaspoon sea salt

Place all ingredients in food processor. Blend until creamy – no
lumps! You may need to scrape the sides periodically, cover and
place dip in the fridge for about 30 minutes before serving. This
gives time for the flavors to permeate.

- Sprinkle of paprika
Sprinkle on top before serving.

Options: Also serve with chopped raw veggies. Use lemon juice instead of lime juice. If your kids shy away from garlic, use roasted rather than raw garlic for a milder flavor.
