YUMMMY NO-YEAST CINNAMON ROLLS

“My kids loved these- they had fun making them together and thought the fresh-out-of-the-oven taste was fantastic. These can easily be reheated in a toaster oven for just a few minutes. These would also be a good lunch box treat.”

Preheat: Oven to 375 degrees Fahrenheit
Equipment: 2 cake pans, mixing bowl, dough cutter, measuring cups and spoons, rolling pin, round cake pan
Prep Time: 10 – 15 minutes
Cook Time: 20-25 minutes
Number of Servings: 8 + , depending on ages

- 3 cups whole wheat pastry flour
- 1/4 tsp salt
- 4 tsp baking powder
Sift flour, salt and baking powder together in a bowl.

- 1/4 cup + 2 tsp. unsalted butter or organic shortening
Add butter or organic shortening to bowl. Use pastry blender, fork or your fingers to combine into a crumbly texture.

- 1 cup milk
Pour in milk and stir into combination. Place onto lightly floured
surface and knead for 1-2 minutes. Roll out into rectangle.

Syrup.
Pour a thin layer of this syrup onto the rectangle of dough.

– 1/3 cup chopped pecans or walnuts (optional)
- 1 tsp cinnamon
- 1/4 cup raisins
- 1/3 cup unsweetened shredded coconut
- 1/3 cup chopped apples

Sprinkle rectangle of dough with nuts, cinnamon, and either
raisins, coconut, apples (or all three!). Roll up like a jelly roll and
pinch ends closed. Cut into 1″ pieces and lay into a round cake
pan with edges touching. Bake in preheated oven for 20-25
minutes. Serve!

Options: For special occasions your may want an additional topping. Here are some ideas form Marni: As soon as you take rolls out of the oven, top with a drizzle of the cinnamon syrup and spread it around to your liking. Or, make a bit of frosting glaze by combining Wholesome Sweeteners Organic Powdered Sugar and milk to your desired consistency and drizzle over the rolls.

To make these gluten free, substitute Pamela’s Baking & Pancake mix for the flour and add only 1 tsp baking powder. Use coconut oil instead of organic shortening or butter.

It feels great to prepare home-made cinnamon rolls with a healthier sweetener that tastes good. On a chilly morning or afternoon, these warm rolls will bring smiles to your kids while fueling them with apples, raisins, cinnamon, nuts and coconut!
