Chicken-Free Patties with Spinach

PREHEAT: Oven to 425 degrees F
PANS/EQUIPMENT: 1 sauce pot, 1 large skillet or stock pot, 1 baking sheet
PREP TIME: 5 minutes
COOK TIME: 45 minutes
NUMBER OF SERVINGS: 4-6 (or more depending on ages)

1 cup brown rice (dry)
Cook rice according to package directions, about 45 minutes.

4 Health is Wealth Chicken-Free Patties
Place Chicken-Free Patties on baking sheet. Bake 5 minutes, turn over, and bake another 5 minutes or until hot.

2 medium apples (organic is best!)
Cut apples into slices.

4 cups fresh spinach (organic is best!)
1 Tablespoon Extra Virgin Olive oil
2 teaspoons minced garlic

In a large skillet, sauté fresh spinach with olive oil and garlic until spinach is wilted. Place patties on serving plates and add the sauteed spinach and garlic mixture on top of the patties.  Serve the brown rice and apple slices on the side.  Serve with a glass of iced water.

OPTIONS: Sprinkle apple slices with cinnamon or nutmeg for added nutrients. For energy savings, use toaster oven instead of oven. For a lower carb option, serve with salad or steamed vegetables in place of rice. If desired, add ginger or cayenne to rice for additional seasoning.
