Curried Lentil Dip

NUMBER OF SERVINGS: 8 or more depending on ages

1 cup dry red or yellow lentils (about 2 cups cooked)
1 teaspoon sea salt

Place 1 cup lentils in a 2 quart saucepan and add water until just covered. Add salt.  Bring to a boil, then reduce heat and simmer until lentils are tender. Add water as necessary to cook lentils until tender. Excess water should be absorbed or poured off.

2 teaspoons extra virgin olive oil
1 small onion, diced
4 cloves garlic, minced
2 teaspoons grated fresh ginger

Heat oil in saucepan over medium heat. Add other ingredients and cook until onion begins to soften.

1 teaspoon curry powder
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
1/8 teaspoon dried mustard
1/8 teaspoon black pepper

Add to saucepan. Cook until spices begin to release their fragrance. Remove from heat. Add 2 cups cooked red or yellow lentils and mix thoroughly. Mash the lentils until coarsely mashed.

2 Tablespoons fresh lemon juice
2 Tablespoons tahini **

Stir in to lentil mixture.
** Tahini is a sesame seed paste that can be found in most grocery stores, usually in the aisle with international or Mediterranean foods.

OPTIONS: The Family Food Experts recommend using paprika in place of ground black pepper since black pepper is difficult to digest. If your family doesn’t like spicy foods, try the Flamous brand Original Falafel Chips – they are also delicious! Elisa says, “This dip is wonderful as is with chips or pita bread, or thin with a little water and serve over rice. Add more water to serve as a soup. Sweet peas can be added as well. Also good over rice with a scoop of plain Greek yoghurt.”
