Maple Glazed Chicken

PANS/EQUIPMENT: Small mixing bowl, large skillet, small skillet
PREP TIME: 10 minutes
COOK TIME: 20 minutes
NUMBER OF SERVINGS: 6-8 (or more depending on ages of children)
4 teaspoons ancho chili powder
1 teaspoon kosher salt
6 thick sliced chicken cutlets (no antibiotics)
In a small bowl, combine the chili powder and salt and sprinkle evenly over both sides of the chicken.
2 Tablespoons extra virgin olive oil
In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned, about 2 minutes per side. Reduce the heat to medium, and cook until chicken is no longer pink and juices run clear.
1 cup chopped raw pecans
In a small skillet, toast pecans over medium heat, stirring frequently until fragrant. Don’t let them burn! Transfer pecans to a plate and allow to cool.
3 Tablespoons balsamic vinegar
1/2 cup Joseph’s Original Sugar Free Syrup, Maple
1/2 cup chicken stock
In a small skillet, over medium-high heat, add the balsamic vinegar and cook until reduced by half. Stir in the maple syrup and chicken stock. Cook over medium heat until thick and syrupy, about 5 minutes. Transfer to a serving platter and serve with the maple syrup. Garnish with toasted pecans. Serve warm.
OPTIONS: Try thick turkey cutlets or turkey breast in this recipe. Try fish! Add 1/2 teaspoon parsley flakes.

With a couple of recipe adjustments you can reduce the amount of sugar, improve the meat source (pork was initially used) and add nutrients such as parsley flakes. Now this recipe serves as a great base for many healthier meals. Use it to turn your kids on to fish. We really like the use of the chili spice and sugar-free maple syrup combination! Your family will, too. This is a fast, flavorful, inexpensive entree. Be sure to serve it with vegetables such as green beans or thin asparagus…pour the syrup sauce over them, too!
