No Bean Chili with Falafel Chips

PANS/EQUIPMENT: Large stock pot
PREP TIME: 10 minutes
COOK TIME: 40 minutes
NUMBER OF SERVINGS: 6-8 (or more depending on ages)

1 pound ground turkey (no antibiotics)
1 yellow onion, chopped
2 cloves garlic, chopped

Add to stockpot and cook, stirring, until turkey is browned.

1 (32 ounce) box chicken broth
Add to pot and bring to a boil.  Reduce heat to low or until simmering.

1 Tablespoon chili powder (more or less to taste)
1 red bell pepper, chopped
1 large (28 ounce) can chopped tomatoes, reduced sodium
1 small (4 ounce) can of mild green chilies
1 (6 ounce) can tomato paste

Stir into mixture in pot and allow to simmer 30 minutes.

1 bag Flamous Brands Organic Falafel Chips, Original (1 handful per bowl)
1 cup shredded cheese (white)

Add chips to bottom of each bowl and spoon chili over the top of the chips.  Top each bowl with a sprinkle (about 2 Tablespoons) of shredded cheese.  Serve warm with extra Falafel Chips for dipping.

OPTIONS: Saute onion, garlic, and ground turkey in 1 Tablespoon of olive oil if you’d like.  Add 1/2 teaspoon dried (1/2 Tablespoon fresh) cilantro, parsley, and/or basil and a drizzle of olive oil or flaxseed oil.
