Pretzel Coated Chicken Tenders

PREHEAT: Oven to 400 degrees
PANS/EQUIPMENT: Food Processor, mixing bowls, baking sheet
PREP TIME: 10 minutes
COOK TIME: 15-20 minutes
NUMBER OF SERVINGS: 6 or more depending on ages

1/2 pound Snyder’s Organic Whole Wheat & Oat Pretzel Sticks, crushed (about 4 cups)
Pulse pretzels in food processor until coarsely ground you should have fine crumbs & large chunks.  Transfer to shallow bowl. Wipe out the processor.

1/2 cup canola oil (organic is best!)
1/2 cup whole grain mustard
2 Tablespoons Dijon mustard
1/4 cup water
3 Tablespoons red wine vinegar or raw apple cider vinegar

Add to the food processor and process until smooth.

Sea salt & freshly ground pepper
Season dressing with sea salt and fresh ground pepper.

2 pounds organic chicken breast tenders
Pour half of the dressing in a large bowl  add the chicken tenders and turn to coat. Dredge the chicken in the pretzel crumbs and transfer to a rack set over a rimmed baking sheet.  Bake for about 10 minutes or until cooked through. Use the remaining sauce that was not used to dredge the chicken as a dipping sauce when serving.

OPTIONS:
The Family Food Experts recommend using paprika or a dash of cayenne pepper as a healthier replacement for ground pepper.  Also substitute raw apple cider vinegar for red wine vinegar.  Be sure that your Canola oil is non-GMO!  Lisa says, “I used chicken tenders and the kids gobbled them up, especially with the mustard sauce. The pretzels were also good dipped in the extra sauce.” If you have chicken breast halves, try cutting them into strips before dredging them to make chicken fingers that are easier for kids to dip!
