Oh so simple! Slide chicken, red pepper and pineapple slices on straw – in that order so this chicken doesn’t touch the pineapple! Really fun to eat. The Carrot Muffin recipe was given to us by a Healthy Recipe Mom. It is posted on our website, www.KidKritics.com. We sprinkled a little coconut on top. A little of the Fruit Medley Yogurt Pudding adds more food groups to this lunch. With a few slices of kiwi, you power up your kids with lots of Vitamin C and a delicious green fruit! If you want, replace the Fruitables with spring water since they are already filling up with some fruit. Your call!

6 Food Groups: poultry, vegetables, fruit, dairy, whole grains, sweet (If your replace the Fruitables with spring water, you add another food group!)

Lunch Box Motto: “Fast and easy to prepare. Fun to eat.” To speed up the kabob making process, use a knife to poke a hole in the middle of your red pepper slices. Needless to say, we expect the Carrot Muffins to have been made a day or two before this lunch box. The chicken and “pudding” are left overs. Alert: if you don’t have leftover chicken, go to the deli and buy a one half inch slice. Then cut it into squares. That’s what we did. This 7/6 Performance rating provides your kids with a lunch filled with invaluable nutrients they will eat!
