This corn pasta salad is made from leftovers of the above Simple Corn Parmesan Pasta recipe, leftover chicken pieces, shredded carrots, frozen peas and a vinaigrette salad dressing. Easy to throw together. You can use deli meats as well. Just cut them into little bite sizes. This is a refreshing very tasty pasta salad that is good cold. Crunchy gluten-free pretzels fill out this lunch’s appeal. A handful offers just enough a variety. We included two fruits for this lunch box. Good fresh pears are easily found in stores this time of year. Look for the cute miniature ones – easier to eat. One is enough. Then we added a couple of cinnamon apple slices. As you know, we like to add cinnamon to as many meals as possible since it is so full of needed nutrient benefits.
