This is why it is a good idea to make extra spinach dip so you can put some in the next day’s lunch box. Lots of finger food makes it easier for kids to eat during a hurried lunch and talk with their friends as well. You are covering all their nutrient needs with this lunch combination: protein, complex carbohydrates which include fresh vegetables and fruit, and a whole grain. Essential fatty acids, herbs/spices and water are also there.
7 God-made Food Colors: green, white, golden, orange, red, yellow, tan, brown
8 Food Groups: vegetables, poultry, dairy, EFAs (essential fatty acids), whole grains, spices/herbs, fruit, water
PERFORMANCE RATING: 7/8
Lunch Box Motto: “Fast and easy to prepare. Fun to eat.” Assuming the dip was made the day before, all this can be thrown together in a few minutes. You can give the older ones a whole orange or grapefruit to peel themselves. Or, you can separate the sections the night before to save morning time. Rolled up turkey slices hold together well so you don’t need toothpicks. Feel good about sending your kids to school with a 7/8 Performance Rated lunch box!
