Almond crackers, Blue Diamond, topped with Almond Cheeze Mozzarella Style, Lisanatti Foods, KKA

This Harvest Salad recipe is neat. First you coat chopped apples in a good ranch dressing. (We recommend Simply Organic brand to avoid unwanted chemicals). This keeps the apples from browning. Then you throw cheese cubes, red grapes (US grown only), and lettuce in the bowl. Swirl in the apples and your are done. You can replace the apples with other fruit of choice. You could also add shredded carrots for another natural food color. The Kid Kritics begged for seconds after they licked their plates clean! The plain popcorn adds a fun crunch to this lunch! We added the Almond Cheeze and crackers to fill bellies with some nice nut protein. The watermelon balls are a nice Summertime treat and is wonderful for kids. If you don’t have a melon ball tool, get one. Slice a melon in half and have your kids make them!

Lunch Box Motto: “Fast and easy to prepare. Fun to eat.” This salad takes as long as it takes you to cut apples and cheese – very little time. Better yet, make if for dinner the night before and use leftovers for the lunch box. Melon balls take a little more time. Again, make them in advance. This is a light crunchy summer fun yummy lunch!
