Pasta Salad: Should be called “Leftover Salad”. This one has gluten-free pasta, chopped turkey bacon, edamame beans, bits of spinach leaves and Italian salad dressing. You can use any combination of leftover meat and veggies. Fast and simple. Cater to your kids palates and throw it together in minutes.

Creamy Chicken Soup: This a mix of sauteed onions, garlic, chicken, Tamari sauce, cumin, chicken broth and northern white beans. Once cooked through, puree it for a smooth texture. Before serving stir in sour cream and some fresh parsley. Or, you can skip the puree step and serve with chunks of chicken. It is filling so a little goes a long way. Crackers are a great crunchy side to accompany salad and soup. Adding tangerine sections and berry juice along with the other food groups in this lunch would make the USDA and “food police” proud. (Not in favor of the latter). This is a power packed lunch. If it is too much food for your children, pass on the soup.
